Say what?!
Peaches? Yes. Cake? Yes. Put those two together? Double yes! No more perfect match could’ve been fated. Eat a cake? You feel guilty afterwards. Throw in some fruit? That guilty conscience is swept away by the oh-so-healthy fruit intake. Hacks people, hacks.
However, if you’re still on edge about consuming this treat, here’s some food for thought – a slice of it is only 152kcal! Sold? So are we.
No oven no problem. We can kautim you cake cravings with the one household appliance all Asian households are bound to have – the legendary rice cooker. (article source)
Ingredients: 5 eggs, 100g cake flour, 10g corn starch, 50g sugar, 170g yogurt and 124g peach.
Step 1: In two clean dry bowls, separate egg white and yolk.
Step 2: Add yogurt with the egg yolks and mix. Then, add cake flour and stir until fully incorporated. Set aside.
Step 3: Beat the egg whites at low speed. Once it starts to foam, add sugar and beat at high speed. Then, add corn starch and beat until stiff peak.
Step 4: Preheat the rice cooker. While waiting, add the egg white mixture into the egg yolk mixture. Fold the mixture together for 3 times until you don’t see the whites.
Step 5: Pour the mixture into the rice cooker. Once small bubbles appear on the surface, add small pieces of peach and start the rice cooker.
Step 6: Once it’s done cooking, wait for another 10 minutes before opening the rice cooker. After 10 minutes, remove the cake and let it cool.
And there you have it. But, beware. It takes a lot to put this dessert down. Feast at your own risk.
