Let’s be real. Be it Malay, Indian, or Chinese, if there’s one common thing that you can find in every Malaysians’ household, it has got to be a pack of Babas curry powder stashed at the safe of their kitchen drawer. More often than not, we can’t differentiate curries like how men can’t tell teal, turquoise, and navy blue apart. Even our palates can fail us at some point.
In Malaysia alone, there’s countless varieties of curries available. There’s no rules on how you’d like your curry because every dish is customizable to your personal preferences. Some likes it with a little more moisture, while other likes it dense and dry. If you’re hailed from the northern part of Peninsula Malaysia, we know you like it a little spicier. Some curries are rich with coconut milk, and others, none.
In conjunction of Diwali, we’ve put together 5 different varieties of Indian curry. So sit tight and curry on with us!
1. Vindaloo Curry
At first glance, Vindaloo curry appears to be little different from the usual, gravy-ier version of curry, but it’s still one curry you ought to know about because its taste gets better as it ages, just like fine wine. Vindaloo curry’s core ingredients consist of vinegar, sugar, ginger, chili peppers and spices which when combined together, exudes an earthy, flavorful taste which keeps you wanting for more.
2. Kurma Curry
The word of Korma or Kurma is derived from the word “cooked meat” and “braised”. Traditionally, kurma curry is made of yogurt and cream which both are braised with water and stock. Kurma curry is mildly spiced, hence creating that mild, creamy texture which goes well with rice.
3. Pasanda Curry
Pasanda curry is a well known meat curry dish which is also one of the favorite dishes of the Moghul Emperor. This dish is mainly served with the red meat, such as lamb or beef, topped with ground almonds, cardamom pods, pureed tomatoes, and cream which brings out the nutty, mild taste Pasanda curry.
Trivia: Pasanda curry is also served in the form of kebab, a Middle Eastern dish where meat are grilled on skewer.
4. Tikka Masala
Chicken Tikka Masala is a the most sought-after curry dishes at Indian restaurants. Tikkka Masala is usually prepared with onions, peppers, fresh tomatoes, and selected spices and herbs to produce a medium mild dry curry dish. Tikka Masala is prepared in the same way like all basic curry dishes but with the addition of yogurt and cream right before serving.
5. Briyani Curry
Briyani, as we all grew to love and cherish, is not a curry per se, but it does have a curry connection. Your Briyani experience will not be complete with the absence of the mixed vegetable curry concoction which is served on the side. A spoonful of saffron flavored basmati rice, chunks of juicy, spiced meat, all drenched with vegetable curry is all that you need for that gastronomic high.
